Pazzi opened its first Pazziria in Beaubourg in central Paris on July 5th. After 7 years of research and development and 5 patents filed, Cyril Hamon and Sébastien Roverso open the first robotic restaurant in the world!
With this project, they aim to provide everyone with access to quality, affordable and available pizzas at any time, prepared by a unique pizza chef: a robot. This autonomous restaurant is the guarantee of a unique culinary show and offers the first immersion in the heart of a robot-restaurant.
Building on the success of its pilot, which opened at the Val d'Europe shopping center in 2019, Pazzi opened its first Parisian Pazziria in Beaubourg, opposite the Pompidou center in the Marais district. The 120m² restaurant is in a strategic and dynamic location benefiting from a high attendance, where it can concoct nearly 80 pizzas per hour to be collected by click & collect, to be consumed on site or via home delivery.
To select their pizza, customers are invited to go to the terminals of the independent restaurant or order on a web app over the Internet. The order is then sent to Pazzi, the pizzabot, endowed with an artificial intelligence developed by 30 experts, engineers and developers, which allows him to do everything: move and flatten the fresh dough, spread the sauce, place the ingredients, cook then put in a recycled box and cut the pizza. Moreover, Pazzi personalizes the quantities of ingredients as desired, identifies and corrects imperfections and replaces them when necessary to ensure optimal preparation.
Capable of producing 1 pizza every 45 seconds and baking 6 at a time, for a total of 5 minutes per pizza, Pazzi is a technological feat that offers fast service for consumers in a hurry and who can observe their order with confidence. transparency. For orders placed through the web app, the robot places them in the boxes while awaiting retrieval. The autonomous restaurant is fully digital, from ordering to picking up the pizza. Screens follow the progress of the preparation while a box system equipped with a scan allows you to collect your order.
It should be noted that Pazzi is accompanied on a daily basis by Thierry Graffagnino, Triple World Pizza Champion. Through his know-how, the chef has guided the inventors to develop original recipes. Today, Pazzi identifies each dough piece and works it differently depending on its ripeness and degree of humidity!
After this opening, Pazzi aims to expand with two new openings in Paris by the end of 2021 and abroad, with an opening in Switzerland scheduled for the first quarter of 2022.
